PhD Topic:
Development of 3D techniques for texturing cereal-based matrices
The matrix of cereal-based products such as bread is highly complex and passes a manifold production process. This production process can be shortened or even be avoided by novel texturing methods. Some approaches are extrusion and heating process in combination with 3D methods (3D printing). The aim of the work is to construct, automate and program a flexible printing and heating tool for viscos materials. Furthermore, the rheological properties of the model systems must be adapted to the process. Print with us the bread of the future!
